Butterflied and charred in the shell, finished with ferment-chilli dressing from our own lab.

Aged in-house for 45 days, cooked over ironbark, rested on smoked butter. Served with bone-marrow crumb and a red wine jus reduced overnight.

Finger-lime oyster, smoked crème fraîche — a cold saline opening that wakes the palate. Paired with Tasmanian sparkling.
Raw & cured
Tuna crudo with desert lime and native pepper, alongside 18-month Victorian charcuterie sliced at the counter.
Garden
Charred heirloom vegetables from our Daylesford grower, whipped macadamia, a broth poured tableside.
From the coals
Barramundi or king prawn over ironbark — the first hint of smoke, matched with aged chardonnay.
The roast
45-day dry-aged rib eye carved at the table, marrow crumb, smoked shallot. The centrepiece of the evening.
