Chef's Table Degustation — Seven Courses at the Pass
Eight marble seats inside the working kitchen, where every course is plated an arm's length away and the fire does the talking.
Eight seats only
One counter, one service — the rarest table in the complex.
Seven movements
A composed arc from raw ocean to smoke and sweet, over three hours.
Chef-hosted
Elena or her sous-chef narrates each course as it's plated.
Dinner inside the machine
The Chef's Table is a marble counter set inside the kitchen itself — the line on one side, your plate on the other. There is no menu on arrival; courses arrive as they're ready, explained by the hands that made them.
It books further out than anything else we offer — four weeks for weekends is standard — because eight people per night is genuinely all the fire can feed this way.

What makes the counter different
Zero distance
Your courses travel ninety centimetres from pan to plate — warmth and timing no dining room can match.
Conversation included
Ask the brigade anything. Half the education happens between courses, over the pass.
Cellar pairings
The sommelier pours a matched glass with every course — upgraded to reserves on request.
A closer look

Three hours, seven movements — here's how the counter runs.
The welcome pour
Tasmanian sparkling and the night's only printed word: 'enjoy'.
Cold to warm
Oyster, crudo, then the garden — each plate placed in front of you by the chef who built it.
The fire courses
Fish then beef over ironbark — carved at the counter while you ask questions.
Sweet & the reveal
The wattleseed sphere, petit fours, and finally the printed menu — the answer key.
